The history of the Pajot family is closely linked to that of hurdy-gurdies. The Pajot family settled in Jenzat in the second half of the 18th century to build instruments, in particular hurdy-gurdies. Founded by Joseph Pajot (1848-1926), the factory attracted the interest of collectors from all over the world in the 19th century for the quality of the instruments it produced.
