GOUFFÉ, Jules Le livre de pâtisserie. Ouvrage contenant 10 planches chromolithographiques et 137 gravures sur bois d'après les peintures à l'huile et les dessins de E. Ronjat. Paris Hachette 1873 In-8°; 10 plates (occasional russeting, marg. wetness on several pages, 2nd plate unbound, pp. 189-194 creased with marg. tear). Green half-chagrin from the epoch, green percaline boards, spine decorated with several gilt frames, gilt edges (slightly rubbed). Uncommon first edition by "Carême du Second Empire" (Oberlé, p. 139). Although Gouffé was heir to Dubois & Bernard and Favre, it was Carême who influenced him most. In his introduction, he pays tribute to his masters: Louis Gouffé (his father), Hubert Lebeau and Antoine Carême, for whom he worked. His pastry store was one of the most famous in Paris, but he had to give it up due to illness. He then became "officier de bouche at the Jockey-Club" (cfr title), where he wrote his "Livre de cuisine", then its counterpart: this work, in two parts devoted to "Préparations" (tempering, creams, cookies, sauces) and "Grosses pièces et entremets détachés" (plinths, almond and filled cakes, tourtes d'entremets, molded, detached and sweet entremets, timbales, hot breakfast entremets, flans, vanilla and ordinary cookies ...). With a section devoted to foreign pastries, especially English (pies, puddings, triffles, buns, muffins), German (various cakes) and Dutch (1 recipe for waffles). The first full-color pastry book. Rare ex. complete with 10 chromolithographs by M.A. Pralon (pièces montées, socles, croustade shapes...) and numerous engravings by E. Ronjat, in black and generally in the text, presenting equipment, molds, pièces montées (including multiple croquembouches). Ref. Oberlé, Fastes, 230. - Vicaire 418. - Bitting 195-196. Joint: 1. Monselet, Charles - L.a.s. from the "roi des gastronomes", one of the first gastronomic journalists (1825-1885), dated 23-12-1894, in which he apologizes to the addressee for having been indiscreet and regrets not having kept his diaries to prove the number of times Gouffé's name appears under his pen. He also sends back a copy of Gouffé's work "regretting that you have found a way to offend a man of letters with whom you may find yourself in daily contact". - 2. mss recipes a.o.
